There’s something reassuring about opening your pantry and knowing you can pull together a meal without running to the store. While fresh ingredients come and go, some staples sit on the shelf for years, and they’re perfectly fine.
Not everything in your kitchen has a short expiration date. In fact, several common cooking ingredients are incredibly shelf-stable when stored properly. They don’t spoil easily, and some technically last indefinitely. If you like being prepared or simply hate wasting food, these are the pantry heroes worth keeping stocked.
Here are cooking ingredients that practically never go bad.

Dried Beans
Dried beans can last for years when stored in an airtight container in a cool, dry place. While older beans may take a little longer to soften when cooking, they remain safe and nutritious long past their purchase date.
Honey
Pure honey is famous for its almost endless shelf life. Thanks to its natural sugar content and low moisture, it is resistant to bacteria and spoilage. If it crystallizes, simply warm the jar gently; it’s still perfectly good.
Pure Maple Syrup (Unopened)
An unopened bottle of pure maple syrup can last for years in a cool pantry. Once opened, it should be refrigerated, but sealed syrup is remarkably stable.
Salt
Salt doesn’t spoil, ever. As a natural preservative, it remains safe indefinitely. It may clump if exposed to moisture, but it won’t go bad.
Sugar
Like salt, granulated sugar has an indefinite shelf life when kept dry. It may harden over time, but that doesn’t mean it’s unusable. A slice of bread in the container can help soften clumps.
White Rice
When stored in an airtight container away from moisture, white rice can last for decades. Its low oil content makes it far more shelf-stable than brown rice.
Cornstarch
Cornstarch keeps almost indefinitely if stored in a dry environment. It remains effective as a thickening agent long after the “best by” date.
Dried Pasta
Sealed dried pasta can sit in your pantry for years without issue. As long as it’s protected from humidity and pests, it’s a reliable last-minute meal starter.
Liquor
Spirits like vodka, rum, whiskey, and gin don’t spoil due to their high alcohol content. While flavor may change slightly over time, they remain safe to use indefinitely when sealed.
Apple Cider Vinegar
Vinegar is highly acidic, which makes it naturally resistant to bacteria. It may change in appearance over time, but it remains safe and usable.
Soy Sauce
An unopened soy sauce bottle can last for years thanks to its high salt content and fermentation process. Even after opening, it has an impressively long refrigerator life.
Baking Soda
Baking soda doesn’t necessarily “go bad,” though it can lose some potency over time for baking purposes. Even then, it’s still useful for cleaning and deodorizing.
